What is underdeveloped coffee?
Underdeveloped coffee is coffee that hasn’t been roasted long enough. It often tastes grassy, hay-like, or slightly pea-like - signs that the roast didn’t fully unlock the coffee’s sugars and structure. You might notice sharp acidity, a lack of sweetness, thin body, and missing complexity.
It usually happens when the development time - the final phase of roasting after first crack - is too short. Extending this stage can help bring out a more balanced, fully developed flavour.
