What is baked coffee?
Baked coffee happens when the roast loses momentum - usually due to a sharp crash or an extended flat line in the rate of rise (RoR). When this happens, the coffee can taste hollow or flat. You might notice it lacks sweetness, the acidity feels dull, and it can taste dry or lifeless in the cup.
It’s often caused by long roast times without enough energy carried through the roast, especially around development.
