What is a Guardiola?

Guardiola is a type of drum dryer used in coffee processing to reduce the moisture content of wet-processed coffee still in parchment. It is an alternative to sun-drying on patios and is considered superior to vertical dryers. The process takes about three days, during which the drum rotates at a low speed while hot air is circulated inside. The temperature of the input heat should be around 50 degrees Celsius. The Guardiola dryer provides a controlled environment for drying coffee, which reduces the risk of over-drying or under-drying the beans. This ensures consistent quality and reduces the likelihood of defects in the final product. The drum-type design also allows for a greater degree of airflow and more even drying, which can lead to improved flavour and aroma. The Guardiola dryer is named after the Spanish company that first introduced the technology in the 1940s. Today, Guardiola dryers are widely used in coffee-producing countries around the world, particularly in Central and South America. While they are more expensive than traditional sun-drying methods, they offer significant benefits in terms of consistency and quality control.
