What is yellow honey processing?
Yellow honey processing is a method where the coffee cherry skin is removed but around 25% of the sticky, sugary mucilage is left on the bean. The beans are then dried under direct sunlight, which gives them a yellow hue as they oxidise.
This approach creates a cup profile that emphasises sweetness and fruitiness. It often sits somewhere between a washed and a natural coffee - clean and structured like a washed, but with an added sweetnessh from the sugars in the mucilage.
