What is white honey processing?
White honey processing, like other honey methods, falls between washed and natural processing. It involves pulping the coffee cherries to remove the outer skin and pulp, but unlike washed coffee, the mucilage (the sticky layer surrounding the bean) isn’t completely removed. In white honey, only a very thin layer of mucilage remains — around 100% is mechanically removed — before the beans are dried uncovered, usually under the sun.
Compared to washed coffees, which use fermentation and water to fully strip the mucilage, white honey coffees skip fermentation entirely. This results in a cleaner, more structured cup than other honey styles, but with a touch more body and sweetness than a fully washed coffee.
Expect a light, smooth, and easy-drinking profile, with delicate sweetness, gentle acidity, and plenty of clarity in the cup.
