What is a coffee mill?
In coffee processing, a mill refers to a facility where the coffee undergoes wet or dry processing to prepare it for export. Wet mills are used for the wet-process and include pulping, fermentation, washing, and drying. The dry mill, which may or may not be at the same location, removes the parchment skin from the green bean, sorts the beans by size, density, and sometimes color, and bags them for export. Wet mills are also known as washing stations, factories (in Kenya), or Beneficio Humido (in Spanish-speaking countries), while dry mills are referred to as Beneficio Seco.
